Best eaten in combination with PURE GREENS AMARANTH!
Ingredients;
- African Nightshade
- Amaranth (Optional)
- Cooking Oil
- Onions
- Garlic
- Tomatoes
- Cream/ Peanut Butter
Method
- First re-hydrate – Soak the required amount of greens in hot water for 20mins
- Drain and discard the water from the soaking. Squeeze out any excess amount of water from the greens and set aside the greens to cook.
- Heat your pan with oil and add the onions and garlic and ginger. Cook till slightly golden brown and fragrant.
- Add the chopped tomatoes and salt and cook till the water from the tomatoes has evaporated and it forms a nice thick tomato base.
- Add the “squeezed” greens into the tomato sauce and cook till tender.
- Depending on your taste you can add cream and Groundnut paste/peanut butter and simmer for another 5 mins Then switch off stove and enjoy.
