Pure Greens African Spider Plant

Recipe

Ingredients

  • African Spider plant
  • Amaranth (Optional)
  • Cooking Oil/ Ghee/Butter
  • Onions
  • Garlic
  • Tomatoes
  • Cream/ Peanut Butter/

Method

  • First re-hydrate – Soak the required amount of greens in hot water for 30mins
  • Drain and discard the water from the soaking. Squeeze out any excess amount of water from the greens and set aside the greens to cook.
  • Heat your pan with oil and add the onions and garlic. Cook till slightly golden brown and fragrant.
  • Add the chopped tomatoes and salt and cook till the water from the tomatoes has evaporated and it forms a nice thick tomato base.
  • Add the “squeezed” greens into the tomato sauce and cook till tender.
  • Depending on your taste you can add sour milk/ cream / Groundnut paste/peanut butter and simmer for another 5 mins Then switch off stove and enjoy
